A common, cosmopolitan genera, Fusarium is often found in our outdoor air samples. Some species occur in soil though they are common plant pathogens regularly found on seeds and grains.
On common laboratory media colonies can display a wide variety of colors including white, yellow, brown, pink, red or violet though natural growth characteristics vary.
Several species have been recognized as opportunistic pathogens of humans and livestock. They produce potent mycotoxins three of which are regulated internationally.
Of note, Fusarium graminearum produces the toxin zearalenone which causes oestrogenic syndrome in young female pigs as it mimics a steroid sex hormone. In contrast this species is also cultured and processed in order to produce a high-protein food sold by the name 'Quorn'.
